"Darker Than Your Soul" Dark Chocolate Cookies

- 1 1/2 cup bittersweet chocolate chips
- 3 large egg whites (room temperature)
- 2 1/2 cup powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1 tablespoon cornstarch
- 1/4 teaspoon salt

Preheat oven to 350°F. Using the microwave, melt 1 cup chocolate chips, stirring every 30 seconds.

Using a mixer, beat egg whites until soft peaks form. Gradually add 1/2 cup powdered sugar. Beat on high until mixture is blended and resembles marshmallow creme.

Step 1
Whisk together whole milk, heavy cream, powdered sugar, and espresso powder in a medium sauce pan over medium heat. Heat until small bubbles appear around edges but do not allow mixture to boil.

- 1/2 cup heavy cream
- 1 cup all-purpose flour
- 1 cup old fashioned rolled oats
- 3/4 cup packed light-brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon table salt
- 10 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1/2 cup milk chocolate chips
- 1/2 cup bittersweet chocolate chips
- 1 pinch sea salt

Preheat oven to 350°F. In a microwave safe bowl, heat cream and caramels on HIGH for 30 second intervals, stirring after each interval. Continue until melted and smooth.

In a mixing bowl, whisk flour, oats, brown sugar, baking soda and table salt. In a separate bowl, microwave butter until melted. Pour vanilla extract into melted butter then pour mixture over dry ingredients.

Bake in oven for 15-20 minutes. Let cool completely on a wire rack before cutting and serving.

- 7 bags of chai tea
- 1/4 teaspoon salt
- 9 oz bittersweet chocolate (chopped)
- 2/3 cup processed cocoa powder
- 1.5 cup heavy cream

Combine heavy cream and tea in a saucepan and place over medium-low heat, stirring occasionally. Let simmer for 8 minutes then turn off heat.

Place chocolate and salt in a medium bowl. Pour the cream/tea mixture through a mesh strainer into the bowl of chocolate. Let sit for 3 minutes.
